  7. Take 5 Dry Red Chillies broken

  15. Prepare 1/2 tsp Turmeric powder
  16. Make ready Buttermilk-as required
  17. Take Salt-as per your taste
  18. Prepare Water-as required

Mor Kuzhambu or Moru Curry is nothing but a buttermilk curry using coconut and lentils. Veggies like Poosanikai/White Pumpkin(Ash Gourd), Vendakka/Okra, Zucchini, Yam or Paruppu Urundai or even Masal Vadai can be used for Mor Kuzhambu. Moru Curry or Mor curry is also called as puliserry and is the seasoned yogurt and coconut curry. Moru curry or buttermilk curry is made with different vegetables. most commonly with vegetables like white pumpkin, colocassia, yam, ladies finger, tomato, cucumber, ash gourd, Ripe mango & raw.

Instructions to make Poosanikai Mor Kuzhambu/ Ash Gourd Buttermilk Curry:
  1. Place a pan in the stove. Switch on the flame. Add Ash Gourd pieces and some water for it to cook. Cover and cook for 15mins until it becomes transparent.
  2. In a mixie,add grated coconut, shallots, coriander seeds, cumin seeds,toor dal, rice, red chillies and garlic. Grind to form a smooth paste by adding some water.
  3. Place another curry pan in the stove. Switch on the flame. Add oil.
  4. Once the oil gets heat, add mustard seeds(you can also add 1 dry red chilli for extra spicy). Once it gets spluttered, add onions and curry leaves. Saute until onions become translucent.
  5. Then add the cooked ash gourd. Mix well.
  6. Then add the ground paste, turmeric powder,salt and buttermilk as required for curry. Half cover the currypan with a lid and cook for 15 mins in medium low flame.
  7. Add coriander leaves. Mix it and transfer to a bowl.
  8. Now it's ready to serve with hot rice and dosa.

Tamil style Mor kuzhambu made with coconut masala and onion. So, I don't make mor kuzhambu often as its too "yogurty" for me to handle. Yogurt in kurma, biryani and things like that is fine but I still haven't made friends with Mor Kuzhambu. Mor Kuzhambu is a scrumptious butter milk curry recipe, popular in Kerala. It is actually buttermilk curry seasoned with cumin seeds, coriander seeds, turmeric powder and mustard seeds.
