You will notice that the water content in tindora will start to absorb all the masala powder turning the dish little dry. Add curry leaves and fry for another couple of minutes and switch off.

  2. Heat oil, add mustard seeds, urad dhal, chanadhal. Fry til golden.
  3. Add cumin seeds after it cracks add onions. Saute till golden brown.
  4. Add red chilli powder and saute till raw smell disappears. Add the ivygourd and mix well.
  5. Next add coriander powder and sprinkle water. Cover with lid and cook for 5 minutes. Open and cook for another 10 mintues till it's nice and dry.

The final dish should look something like this… little dry and crisp. Once the onions are sauted well add the ivy gourd / kovakkai pieces, mix and saute them well, then add turmeric powder, hing, coriander powder, red chili powder and salt, mix well, also add sufficient amount of water, let the ivy gourd pieces cook well, place a lid to.
