Steps to make Kovakkai Poriyal/Ivy Gourd Fry:
- Wash and cut the Kovakkai/ Ivy Gourd into thin round slices.
- In a kadai, add oil. Once oil gets heat, add mustard seeds. Let it splutter.
- Add onions, curry leaves and dry red chilli. Saute till onions becomes translucent.
- Add turmeric powder. Saute for a minute.
- Then add the sliced Kovakkai/ ivy gourd, sambar powder and salt. Saute well.
- Add required water. Cover with a lid and cook till Kovakkai/ ivy gourd gets cooked.
- Now it's ready to serve. Serve as a Sidedish for your lunch.
Heat kadai/frying pan with oil and temper with the mustard, cumin, curry leaves. Add onion, if adding, to it and fry till golden brown.
