The ingredients needed to make Pineapple Pachhadi:
  1. Make ready 1 cup chopped pineapple
  2. Get 1/2 tsp red chilli powder
  3. Take 1/4 tsp turmeric powder
  4. Prepare 1/2 cup water
  5. Make ready to taste Sugar
  6. Take to taste Salt
  7. Take For paste: -
  8. Make ready 1/2 cup grated coconut
  9. Make ready 1/4 cup curd
  10. Make ready 1/4 tsp cumin seeds
  11. Make ready 2 green chillies chopped
  12. Take For tempering: -
  13. Take 1 tsp coconut oil/ sesame oil
  14. Get 1/2 tsp mustard seeds
  15. Take 1-2 dry red chillies
  16. Make ready 1/4 tsp urad dal / split black lentil
  17. Get 7-8 curry leaves

Allow the cooker to cool off on its own before opening. Meanwhile, add all the ingredients for the coconut paste to a small mixer/grinder. Grind to a very smooth paste. Add just a tiny bit of water to assist in grinding till smooth.

Instructions to make Pineapple Pachhadi:
  1. Grind coconut, curd, green chillies and cumin into a paste in a blender.
  2. In a pan or wok/ karahi, add pineapple, water, red chilli powder, turmeric powder, salt and sugar(depending on sweetness of pineapple). Cook slightly till pineapple is slightly soft.
  3. To the above mixture add the ground paste from step 1. Cook for 2-3 minutes.
  4. Heat coconut or sesame oil in a pan. Add mustard seeds. When it crackles,add urad dal, broken dry red chillies and curry leaves.
  5. Add the above tempering to the mixture in step 3 and cook for 1 minute.Switch off gas and leave the pachhadi for few hours. Serve with dosa or rice.
  6. Tip- 1- Cook on medium heat with stirring to avoid seperation of curd. 2- Also serve the pachhadi after some time from preparation as it tastes better with enhanced flavors. 3- Can replace pineapple with Ripe mangoes or bananas.
