Parippu Vada or Masala Vada are similar fritters made with chana dal or other local variety of split peas or a combination of different kinds of split peas. The Vada use different pulses or ingredients depending on the region and are also called different names. To simplify the process, parippu vada are made. Press the dal with a paper towel, this will help in removing any water left in.
Steps to make Parippu Vada / Dal Vada:
- Soak the toor dal for 2-3 hours.
- Drain all water, and grind the dal to a coarse paste. Make sure not to add any water at all while grinding.
- Add in all chopped ingredients, salt and asafoetida, and mix well.
- Finally add the rice flour and mix well.
- Heal oil in frying pan.
- Make small patties of the batter in your palm and deep fry it in the oil. Make sure oil is hot when you immerse the patties. Once you have put in a batch, say 4-5 of them, lower the heat and deep fry turning them over, ensuring both sides are fried well.
- Yummy parippu vada ready to serve. Make sure you have its companion - a glass of piping hot elaichi tea with it!
Drain the water completely from the dal with a colander. If any water is remaining the vada will break apart. You can use an absorbent paper for this. In a mixer, grind the dal into a paste. Do not make it into a fine paste.
