The ingredients needed to make Banana Stem Fried Rice:
  1. Prepare 5 "-6" long banana stem
  2. Prepare 2-3 cups buttermilk
  3. Make ready 1 cup basmati rice, soaked in water for 30 minutes
  4. Take 1 tbsp. ghee
  5. Take 1 tbsp. oil
  6. Prepare 1 " cinnamon
  7. Make ready 2-3 green cardamoms
  8. Make ready 4-5 cloves
  9. Take 2 bay leaves

  11. Take 2 star anise
  12. Get 1 tsp. cumin seeds
  13. Take 1 onion, sliced

  18. Make ready 1 tsp. garam masala powder

  22. Take few cashewnuts, fried
  23. Prepare handful coriander & mint leaves

Steps to make Banana Stem Fried Rice:
  1. Slice the banana stem finely and immerse in buttermilk till cooking time to avoid discoloration.
  2. Drain the banana stem and pressure cook in sufficient water for 2-3 whistles. Drain and squeeze out any water.
  3. Heat oil and ghee. Temper with bay leaves, cinnamon, cardamoms, cloves, mace, star anise and cumin seeds. Saute for a few seconds.
  4. Add the onion and fry till light brown.
  5. Then add all the dry spices (except salt) and the ginger-garlic paste mixed with 1/4 cup water. Saute till the oil separates.
  6. Then add the tomato and continue to fry till it is mashed.
  7. Add the drained banana stem and salt. Fry for 2-3 minutes on a medium flame.
  8. Add the rice & green chilies. Mix everything well and saute for another 2-3 minutes.
  9. Then add the mint and coriander leaves and toss well.
  10. When done, garnish with the fried cashews & serve with raita & papad.
