  1. Prepare 1 cup Pearl millet/Kambu
  2. Get 1 cup Idli rice
  3. Prepare 3/4 cup urad dal
  4. Get 1/8 tsp methi seeds

After trying a handful of millet recipes I wanted to try Kambu dosa….googled around but most recipes used idli rice and I wanted. It is very rich in Calcium, Protein, Iron and Magnesium. Using a blender grind dal to a fluffy consistency, followed by poha and grains. Add little water while grinding as millets don't take much like rice.

Instructions to make Kambu / Pearl Millet Idli:
  1. .Clean rice and millet and soak in water.Soak urad dal and methi seeds together
  2. .First grind dal mix to a fine paste with some water.Transfer it to a big container.
  3. Then grind rice-millet mix finely.Transfer it to the same container.
  4. Add salt and mix the batter well.Leave it overnight for fermentation.
  5. Next morning mix the batter well, pour into idli plates and steam it.
  6. When done remove from plate and serve hot with your favourite chutney, sambar.

Kambu dosai recipe - Pearl millet is known as Bajra in Hindi, Kambu in tamil and sajjalu in Telugu. These kambu dosa / bajra dosas are made with whole grains and are healthy, good in taste and texture. These make a very nutritious Breakfast with good amount of protein, carbs, minerals and iron. add in pearl millet. puree again. this wont be too smooth, but that doesn't matter.
