- Prepare 1 cup rice
- Prepare 1/2 cup black gram lentils daal
- Get 1/4 tsp fenugreek seeds
- Get 1/2 cup curd
- Prepare 2-3 TSP split Bengal gram
- Get 1 tsp Ginger paste
- Take as per taste Salt
- Make ready 1 tsp Green chilli paste
- Prepare Pinch asafoetida
- Get 2-3 tsp ghee
- Make ready Pinch baking soda
- Make ready For sambhar
- Make ready 1 cup split pigeon peas
- Make ready 1/2 cup Water
- Take 1 tbsp For masala oil
- Prepare 1/2 tsp Fenugreek seeds
- Make ready 1 tbs Cumin seeds
- Get 1 tbs Coriander seeda
- Make ready 2 Cloves
- Prepare 1 Cardamom
- Get 1 tbsp Ginger garlic paste
- Get 2 tbsp Coconut
- Take as needed Curry leaves
- Take 2 tsp Red chilli
- Make ready 1/2 tsp Turmeric powder
- Take 1 large Onion
- Make ready as per taste Salt
- Take 2 tbs Oil
- Prepare 1 each Tomato, brinjal, drum sticks, potato. Veggies like As your wish
- Take 1 tbsp Gud / jaggery
- Get 2-3 tbs Tamarind
- Make ready 1 tsp For tadka Mustard seed
- Prepare a pinch Asafoetida
- Get 5 to 6 Curry leaves
The batter for the idlis is mixed with spices and steamed. Traditional idli molds are not used for these idlies. This sounded different than the regular idli and decided to do it. To go with it, I made couple of chutneys and onion sambar.
Steps to make Kanjipuram idli sambhar:
- Soak rice for 7-8 hours. Than grind coarsely.
- Soak daal for a hour. Take a pan add oil & all masalas & saute in low flame till it released smell of masala.switch off the flame. When it cools grind with little water & make smooth paste.
- Soak black gram lentils daal & fenugreek seeds for 7-8 hours. Than grind with the curd.
- Mix the both batter.Add ginger paste, salt, green chilli paste, Asafoetida, ghee, baking soda & mix well. Batter consistency should be thick. Pour batter in idli mould and steam untill it's steamed.
- Take cooker put 2 tbsp oil. Put veggies, salt & saute for 2 min. Add masala paste, & daal.add 4 cup water. Boil the mixture. Cover the lid & blow 5 whistle in high flame then cook in low flame for 15 min. Switch off the flame.
- When cooker is totally cool then open a lid. Add tamarind, gud & stirred. & again put thd cooker in low flame.
- Make tadka heat oil add mustard seeds,curry leaves,asafoetida and pour in to sambhar
- Take a plate put idli in it & pour sambhar onto it. Serve hot.
Some of the Kanchipuram idli recipes I looked at had hing or asafetida and Valli's recipe did not call for it. Kanchipuram idlis are a well known variety of idlis. These are idlis spiced with cumin, pepper and ginger powder. Kanchipuram idli is a south Indian special breakfast with black pepper and cumin tempering with ghee and asafoetida.
