- In a bowl, mash the potatoes, add grated paneer and mix.
- Heat 1tbsp oil in a pan and add cumin seeds.
- Add mashed potatoes and paneer in the pan, add salt, turmeric powder, garam masala and mix everything.
- Garnish the stuffing with coriander leaves and keep it aside to cool down.
- Slice off the tip of the tomatoes and remove the pulp. Keep aside the pulp in a bowl.
- Take a grinder and add tomato pulp, cashew nuts, chillies, ginger and grind it into a paste.
- Heat oil in a deep pan, add bay leaf.
- When oil heated, add the paste and mix throughly.
- Add all the spices mentioned under ‘gravy’ and mix well.
- Turn off the flame after a boil.
- Insert the stuffing inside the sliced tomatoes.
- Heat a Tawa, add oil to it, add some jeera when oil heats up.
- Keep the tomatoes upside down inside the pan and cover with a lid.
- Steam the tomatoes for 2-4 minutes until the tomatoes gets soft to eat.
- Turn off the flame, don’t overcook and don’t heat the tomatoes again.
