  7. Add water just enough to make a thick gravy. Cook covered on a low to medium flame until the potatoes and bringals are cooked completely.
  8. Taste the veggies and add 1 tsp lemon juice, more salt, garam masala if needed. Allow to simmer for 2 to 3 minutes.
  9. Add chopped fresh coriander and garnish with whole red pepper.
  10. Serve aloo baingan with rice and roti.
