  1. Prepare For Aloo Baingan sabzi :-
  2. Prepare 5 Potatoes boiled
  3. Take 5 Baingan/Brinjal washed and cut into small pieces

  5. Take 1 inch piece ginger crushed & finely chopped
  6. Make ready 5 Cloves garlic crushed & finely chopped
  7. Prepare 2 Green chillies, finely chopped
  8. Make ready 1/2 tsp Turmeric powder
  9. Get 1/4 tsp red chilli powder
  10. Take to taste Salt
  11. Get Few curry leaves
  12. Prepare 1/2 tsp Mustard seeds
  13. Prepare 1/4 tsp Asafoetida
  14. Prepare Few Lemon drops
  15. Get 1-2 tbspn Oil
  16. Prepare 1 tbspn coriander leaves finely chopped
  17. Make ready For vada batter :-
  18. Take 1 & half cup Besan/Gram flour
  19. Prepare 2 tbspn Rice flour
  20. Get 1/2 tsp Red chilli powder
  21. Make ready 1/2 tsp Turmeric powder
  22. Make ready to taste Salt
  23. Make ready 1/4 tsp Hing /asafoetida
  24. Take 1/4 tsp Baking soda
  25. Prepare as required Water for making batter
  26. Make ready as required Oil for deep frying
Instructions to make Aloo Baingan Vada Pav !:
  1. Take a kadhai, put oil and heat it, when hot add mustard seeds, then asafoetida powder, then add curry leaves, chopped ginger, garlic and green chilli. Saute well for a few minutes.
  2. Then add in the chopped onion and saute again for 2 minutes.
  3. Now put the turmeric powder and red chilli powder, then add the chopped brinjal pieces, mix well and let it cook for a few minutes.
  4. Once it gets cooked add in the boiled and mashed potatoes, add salt and give a nice stir. Later put lemon juice and finely chopped coriander leaves and garnish it. Turn off the gas.
  5. Now we shall make the vada batter. For that take a bowl and put all the dry ingredients,and mix well. Then add little water (as per need) and make a smooth thick batter.
  6. Once the sabzi cools down make small balls. Keep the kadhai ready for deep frying, pour oil and let it get heated.
  7. Now dip the balls in the besan batter and deep fry them till nicely brown and crisp. Serve hot.
  8. For the assembling, you take the pav buns and cut into half. Do not cut it fully. Then apply green chutney and little peanut chutney. Keep the vada in the center and press the pav gently. Serve immediately with fried green chillies.
