- Heat the oil in a heavy- based saucepan. Add celery, onion, and carrot .cover and cook for 10min. Over low heat, stirring occasionally
- Add the tomato to the pan with the parsley, sugar, and 125ml of water. Bring to boil, reduce heat to low ,and cover and simmer for 45min. ,stirring occasuonaly.
- Note: season to taste and if necessary , add up to 185 ml more water if the sauce needs thinning.
- Cook the pasta in large saucepan of rapidly boiling water salted water until semi hard . drain well and return to the pan.
- Serve pasta to plate and serve gently sauce.
