- In a pan heat the oil, add jeera and let it crackle. Then add chopped ginger, garlic, green chillies and cook until raw smell is gone. Add onions, a pinch of salt, hing and cook till it's translucent. After that add all the spices, stir a little (don’t let the spices burn). Finally add cooked dal and give it a good mix. Switch off the flame, add chopped coriander and mix. Let the stuffing cool under room temperature.
- For paratha, cut small portion of dough, give it a bowl like shape, add stuffing and close it's opening through rotating and pressing through fingers. Make it a smooth ball, spread some flour on rolling board and then flatten the dough by rolling pin into circular parathas.
- Heat the tawa and place raw parathas on it. Cook on both side with desi ghee until you see beautiful brown spots on both sides.
- Garnish it with butter and serve with your favourite chutney, raita or achar and even some fresh fruits if you want. :)
