Now heat oil in a pan, crackle mustard, cumin and curry leaves. Add in onions and chillies, salt and saute till golden. Add in tomato puree and cook till oil separates. Now add in spice powder and fry for couple of mins.

- Wash and soak yellow moong dal in water for 1/2 hour. Wash,peel,and cut ridge gourd into small pieces.
- In microwave safe bowl add ridge gourd (turiya), pieces, soaked yellow moong dal, tumeric powder, red chilli powder, garam masala and rock salt..mix well. Cover with lid. Micro cook at 80 power level for 10 mins.
- Serve / relish oil free ridge gourd- moongdal subzi garnishing with chopped fresh coriander leaves with jowar roti in lunch.
