  1. Fry diced onion, minced garlic, diced chicken breast and chopped orange bell pepper with olive oil on medium heat until cooked
  2. Add seasoning and stir well.
  3. Remove from pan.

I made these for dinner with my leftover avocado mango salsa but these are also great for lunch or you can even serve them as appetizers. Saute chicken and onion over med-high heat until chicken is no longer pink and onions are transparent. You can use vegetable oil or cooking spray when cooking quesadillas.
