  1. In a kadhai add oil and when it is hot add cumin seeds, asafoetida, curry leaves, bay leave and cloves. When it starts crackling add chopped green chilli, garlic, ginger and fry for few minutes. Then add chopped onion.
  2. Onion fry lightly till it soft and turn pink well. Add red chilli powder, coriander powder, turmeric powder, dry mango powder and salt. Mix well and fry for a minute.
  3. Add the chopped tomatoes and mix well. Fry for about 2-3 minutes and covered till the tomatoes becomes soft and mushy.
  4. Now add garam masala powder and mix well. Cook for a minute and until the curry turns thick. Switch off the flame.
  5. Serve tomato curry with chapati.

This is a great vegetarian curry with a blend of heat and spices. Sprinkle the asafoetida powder over the seeds and add the curry leaves.
