My recipe uses tomatoes and onions in the gravy with cashew nuts. To prepare the almond gravy, grind the soaked almonds, red chillies, chopped onion, ginger and garlic to a smooth paste. When it is done, add the prepared paneer cubes. Then add the blanched tomatoes into the mixie and grind it.(I used the small Jar so i grind it by adding two tomatoes initially and then other two.
Steps to make Paneer in tomato almond gravy:
- Heat a pan and dry roast, red chillies, whole garam masala. Remove cool and grind it to a fine powder
- Soak cashews, almonds and poppy seeds and melon seeds in water for 20minutes. Grind it to a paste
- Heat a thick bottomed pan, add ghee, chopped garlic, onion. Stir fry for 3minutes. Add chopped tomatoes and fry for 5minutes more. Cool and grind to a paste.
- Pour the red paste in the pan, cook for 2minutes, add red masala powder, almonds paste, salt, red chilli powder and coriander powder
- Add chopped paneer cubes. Let it boil for 5minutes. Add crushed kasuri methi
- Just before serving sprinkle some crumbled paneer.
If you Heat oil in a kadai,shallow fry the Paneer and take it out. Add cumin seeds and hing in the same kadai, once the seed splutter add the cinnamon sticks.
