Baked Samosa made with whole wheat flour is a far healthier version of Punjabi Samosa which is deep fried. For the Baked Samosa, i have rolled the outer covering thin. Indian recipes call for using Maida or All-purpose flour in making samosa. Until now I have bought what is called all-purpose flour for samosas, but actually what is sold here as "white flour" seems to.
Instructions to make Wheat flour samosa:
- In a mixing bowl put wheat flour, Salt, carom seeds and 4 spoons oil.
- Mix it well to make a crumble mixture. Now add little water and knead it into a tight dough. keep aside for 30 minutes.
- Heat 2 spoons oil, add cumin seeds, mustard seeds, grated ginger and green chilli paste and sauté for 20 seconds.
- Now add all spices, mashed potatoes and boiled peas, mix it well.
- Saute for 5 minutes then add chopped coriander leaves and mix well.
- Now shaping the samosa, make 5" diameter circle with dough and cut into two halves.
- Take one semi-circle and join two corners of a straight line to form a cone and place 2 spoons stuffing in the cone and apply water at the edges to seal it.
- Heat oil in a pan and fry these samosa on medium heat.
- Serve hot with chutney or sauce.
