My friend Gina from nursing school, shared this award winning slow cooker chili recipe with me. She made it for a chili cook-off fundraiser and I couldn't stop refilling my bowl. Instructions to make Turkey and chunky veg chilli:
  1. Heat 1 tbsp oil and add the turkey. Cook on a medium high heat until starting to brown.
  2. Strain off fat and set the turkey aside.
  3. Finely chop garlic, onion and carrot and add to pan with the second tbsp of oil. Cook on a lower heat for 5-10 minutes (until starting to soften), stirring often. Add the tomato purée and stir well.
  4. Return the turkey to the pan and combine.
  5. Add peppers, stir and cook for a few more minutes.
  6. Add tomatoes and beans as well as approx 150ml water. Mix well and bring to the boil.
  7. Add herbs and spices. Lower the heat, cover and allow to simmer for 10 minutes.
  8. Add mushrooms and simmer for a further 10 minutes.
  9. Season to taste with salt and pepper. Serve with your favourite rice.
