- Method for wheat bhatura :
- In a bowl take milk, curd, salt, sugar and baking powder.
- Mix well till all the sugar is dissolved. Add 1 tbsp oil and mix well.
- Take wheat flour in a bowl and knead it with milk curd mixture for 5 mins.
- Add a tsp of oil over the dough and knead it again for 1 min.
- Cover it with a plate / bowl and let it rest for 30 min.
- (Don't keep it in fridge. keep it at some warm place).
- After 30 min knead it again for 1-2 min.
- Take a small ball from the dough and roll it with a rolling pin to an oval shaped bhatura.
- Deep fry it in hot oil.
- Drain and transfer wheat flour bhatura in a serving plate.
- Method for Chana masala :
- In a mixer jar add all the ingredients given for grinding. Add water little by little and grind it to a smooth paste.
- Drain water from boiled chanas.
- Heat mustard oil in a kadai.
- Add cumin seeds and dry red chilli and let it sizzle for a min.
- Add smooth tomato paste.
- Cook it on slow till the raw smell of tomatoes are gone and all the water evaporates.
- Add salt, red chilli powder, coriander powder, kasuri methi, cumin seed powder, chaat masala powder, chana masala powder and garam masala powder. Mix well.
- Add little water from the boiled chana and mix well.
- Add imli paste and mix well.
- Again add little water and mix.
- Now add boiled chana and mix well.
- Add chana water as required to make the gravy.
- Cook it on high for few mins.
- Switch off the flame.
- Garnish with coriander leaves.
- Serve hot with wheat bhatura.
