  15. Take 1 Bunch Coriander Leaves Fresh

Pandi pork curry is a popular Coorgi curry recipe that is commonly served with rice. A very famous Coorgi (relished and prepared mostly in Coorg) dish, pandi pork curry is rich and dark in colour. A full flavoured pork curry from Coorg in South India. There are very few areas in India where pork is consumed but in the southern region of Coorg pork is considered a delicacy.

Instructions to make Coorg Pork Curry:
  1. Clean the Pork pieces with water 3 times and get rid of any scum on top. Get rid of excess water and add turmeric,Chili,Pepper and Salt powder. Mix well, cover it and refrigerate.
  2. Cut onions into rough pieces and add it to the mortar and pestle along with Cumin seeds, Slits of Green Chili, Ginger,Cumin Seeds, Curry leaves and Coriander leaves and pound them to make a coarse paste.
  3. Take the marinated Pork 30mins before cooking (this will alter the cooking time) and put it inside a pressure cooker with 3 table spoons of water. Cook till 2 whistles.
  4. Using pressure cooker decreases the time, you can always slow cook it but it increases the cooking time.
  5. On a separate pan add 2 tablespoons of coriander powder and dry fry it till it turns dark brown to black.
  6. Take a Heavy bottomed deep pan/casserole and add 2 table spoons of oil, once its hot, add the coarse mixture of Onion, ginger n garlic and Fry till the raw flavors are out. (3 minutes)
  7. Add the roasted coriander powder to the coarse mixture and fry them for 2 minutes.
  8. Add the pork pieces with its juices (if any) into the casserole and mix well, stirring occasionally for 5-8 minutes. After that add the Coorg Pork Masala.

  10. After adding the masala let the pork come to boil and once that's achieved, lower down to low flame and keep cooking for further 8-10 minutes. [Add salt according to your taste]
  11. Finally once it's done add 1/2 teaspoon (very important) Kachampuli Vinegar and mix well and turn off the heat.
