  1. Prepare 1/2 kg fresh okra
  2. Take 1 onion

Okra is cooked in many ways in Indian cuisine. It usually is a veggie side served as a part of a meal, served with dals and curries. It can be served as simple side cooked with just onions, or cooked in a sauces. Bhindi Masala is a delicious, easy to make vegetable dish.

Instructions to make Bhindi Masala (okra Masala):
  1. Wash and completely dry okra. I wash it the night before and leave it in a colander, covered with a kitchen towel to dry overnight. Chop the top and end off and cut the okra into small pieces.
  2. Next slice the onion and chop the tomatoes
  3. Add the oil to a wide pan and stir fry the okra for about 2-3 minutes until soft. Ensure it doesn't brown and that it retains its colour. Remove onto a plate.
  4. In a seperate pan fry the onion in some oil until soft and brown. Remove and spread out on a kitchen towel
  5. Now add some oil to a wide pan and add the chopped garlic. Stir for a few seconds and add a 1/4 cup of water.
  6. Next add the salt, red chilli powder, tumeric, and kalongi seeds and stir for a few minutes.
  7. Add the chopped tomatoes, whole green chillis and continue to stir. When the tomatoes are soft add the fried okra and continue to stir to mix all the ingredients together.
  8. Add the fried onions and stir. Cover with lid and allow to cook in its own steam (dumm) an a low heat for 5-10 minutes. Until all the ingredients have cooked and combined together. It should not be too soft or mushy.
  9. Garnish with fresh corriander and green chillis. Serve with fresh fluffy chapattis.

This is a North Indian style recipe with just perfect blend of spices. Add the salt, mango powder and bell peppers, cook for another minute. Salt is added last to avoid the okra becoming lacy. This bhindi masala recipe comes close to the bhindi masala dry sabzi served in restaurants. It is made in an onion-tomato base with the regular masalas Bhindi or okra is a favorite veggie at home, after gobi and arbi.
