Shahi Tukda is a rich, royal mughlai dessert of fried sugar syrup coated bread topped and soaked with fragrant creamy sweet thickened milk or rabri and garnished with dry fruits. Shahi tukda known as shahi toast or 'double ka meetha' is a dessert made of Bread, Milk & nuts. Its a Mughlai cuisine which is rich in its Shahi tukda was once called a dessert of Kings & queens.

Instructions to make SHAHI TUKRA (shahi Toast):
  1. In a broad thick bottomed pan take 1/2 litr milk and bring to the first boil. Then add milk powder and saffron.
  2. Keep stirring and also keep on scrapping the dried milk from the sides and add them back to the milk.
  3. When is become thick consistency switch off heat add sugar or cardamom powder and add dried fruits stir well.
  4. (Frying bread) Take bread slices cut them sides or shape them squares, triangle or rectangular.
  5. Heat 1 tbsp ghee in flat pan or tawa place the bread slices and on a low to medium heat toast them both sides untill golden brown.
  6. Drain the bread slices on paper towel.
  7. (For sugar syrup):- Mix 1/2 cup of sugar with 1/4 cup water in a pan cook the syrup untill thick or one thread consistency switch off heat add cardamom powder, rose essence stir well.
  8. Dip the fried bread slices in the sugar syrup with the help of spoon coat the slices or "Arrange the bread pour the syurp into the bread slices.
  9. Arrange the sugar coated bread slices in a serving plate pour the rabri and garnish with sliced almond, cashews, raisins, pistachio.
  10. Serve warm or chilled as a dessert.
