The ingredients needed to make Phaanu pahari dal:
- Get 1 cup horse gram/green gram/red gram or arhar dal
- Make ready 2-3 tbsp yogurt
- Prepare 3-4 pods Crushed garlic
- Take 1/2 tsp Crushed Ginger
- Prepare 1/2 cup Chopped onion
- Make ready 1 tsp Cumin seeds
- Take 1 pinch Hing
- Take 1 tsp Turmeric powder
- Prepare 1/2 tsp Coriander powder
- Take 4-5 Green chilli
- Take 1/2 tsp Red chilli powder
- Get Cooking oil 2 tbsp + 2 tbsp for searing cutlets
- Make ready Salt as per taste
- Get 2-3 Dry red chilli
- Take 1 tbsp Ghee

OK, so we might never agree how to spell it, but I think we can all agree that Dahl is one of the most fabulous transformations of the humble lentil! Phaanu - Lip-smacking Delicious Baadi - Traditional Food Considered another most popular food of Uttarakhand, Phaanu is the complex of different. Accompanying Phaanu is Baadi, which is made of Buck wheat flour (Mandua flour).
Instructions to make Phaanu pahari dal:
- Wash and soak dal for 2-3 hours.
- Drain water and grind the soaked dal with yoghurt, green chillies, garlic and salt to make a thick paste. Water can be used to grind dal if it is dry.
- Take 1/4th portion of paste and make small cutlet shapes.
- Heat a skillet,put some oil and sear the cutlets to golden brown. Keep aside.
- In another kadai add mustard oil. Splatter cumin seeds in the hot oil.
- Add chopped onion, crushed ginger and saute for sometime.
- Add turmeric powder, chilli powder, coriander powder and mix well.
- Now add the remaining dal paste and stir continuously.
- Add 2-3 cups of water to make a thin gravy. Add salt.
- Let it boil. Add the lentil/dal cutlets to the boiling dal.
- Cover and simmer for 10 minutes to cook the dal completely.
- After 10 minutes check the gravy, adjust seasoning and also thickness of the dal.
- In a tadka pan heat ghee, add dry red chillies and immediately pour over the dal.
- Delicious phaanu is ready to serve with roti or rice.
The dal is kept for cooking in an iron kadhai over slow fire and Voila! You have some mouth watering food to eat! Best Dishes : Singal, Gahat ki Dal, Rus, Aloo ke Gutke. Non Veg Dish : Chicken Korma. Veg Dishes : Kandalee ka Saag, Kaafli, Arsa, Gulgula and Kulath Phanu.
