Appam (Tamil: அப்பம் or ஆப்பம், Malayalam: അപ്പം, Sinhala: ආප්ප) is a South Indian pancake dish, made with fermented rice batter and coconut milk, common in the South Indian states of Tamil Nadu and Kerala, as well as the island nation of Sri Lanka. Appam is a very popular and traditional breakfast of Kerala. This is not the typical Kerala appam Traditionally appams are made in iron skillet called appa chatti. Instructions to make Nutritious Appams:
  1. Make urad dal batter. Soak urad dal for at least 6 hours with few fenugreek seeds. Then throw the water away and grind the dal. Let it ferment overnight.
  2. Chop carrot, capsicum and coriander leaves finely. Add to the batter and mix well. Add little salt.
  3. Grease an appam pan with 2 drops of oil in each compartment and switch on the gas.
  4. Put 1-2 scoops of the mix into each of the appam compartment. Cover and let it cook.
  5. Turn each side when slightly browned. Add 1-2 drops of oil on each side before turning.
  6. Let it cook till other side is browned.
  7. Transfer them into a casserole to stay warm or eat when hot. Serve with green chutney or ketchup.

This appam doesn't need much work at all, soaking, grinding and fermenting. This appam turned out so soft and delicious. Rice, urad dal and fenugreek seeds as main ingredients. This is my way of making appam, we all like it to have with coconut milk sweetened with jaggery and flavoured.
