- Get 1/4 cup grated coconut

I used only carrot, potato and baby beans. You can make only with potato too. Appam cookes very fast, so you can make hot for your family when ever they sit for having breakfast. Breakfast with appam, vegetable stew and sweetened coconut milk.
Steps to make Appam with vegetable stew:
- Step 1 For Appam…. - firstly, grind soaked 1 cup idli rice along with ¼ cup coconut. - take 2 tbsp of prepared batter and pour over pan along with ½ cup water. make sure the flame is off.
- Mix well making sure there are no lumps. - cover and ferment in warm place for 8 hours. - add in sugar,salt and baking soda.
- Heat kadai or pan or appachatti over medium flame and pour a batter into the kadai. - immediately twirl the pan to spread the batter in a circle motion.like this.
- Further cover and simmer for about 2 minutes or until the edges turn golden brown and gets cooked completely.
- Step 2 For stew….
- Heat coconut oil in the pan add in cardamom, black pepper,cloves and curry leaves.add garlic and green chilli.
- Add the vegetables, i m using potato,onion,tomato,sweet potato you add any vegetable as you like.add thin coconut milk and salt to taste. Cover and cook till the vegetables are soft, around 10 minutes.Open the lid, add more coconut milk Let it simmer for a couple more minute
Recently i came across the recipe of Vegetable stew in one of my old cook book and i find it similar to one of my bookmarked recipes from here I enjoyed the stew with rotis too. In the original recipe they used green peas also. since i don't have green peas in hand i didn't add. Vegetable stew recipe with coconut milk is a traditional Kerala style mild curry served with appam. Delicately spiced, mild, fragrant with chock full of veggies is veg stew for you! It is an experience in itself to feast on a plate of lacy appam and stew, a bowl of coconut milk doesn't hurt too!
